Cauliflower Rice!

When made the right way, this cauliflower rice is the perfect substitute for rice. Cauliflower is an excellent source of vitamins C, K, and B6.

Ingredients:

20 ounces of The Broth Lab Fresh Vegan Broth

1 cauliflower head, cut into florets

Directions:

In a medium saucepan over high heat, bring the broth to a gentle boil then add in the cauliflower florets. Cook, uncovered for 10 minutes.

Strain the liquid, reserving it to use to cook another vegetable, and use a potato masher to turn the cauliflower into rice.
