If you’ve been dreaming of holidaying on the Mediterranean with its stunning views, crisp cold sea, fresh and colorful farmer’s markets that attack all your senses, and simple rustic dishes then this recipe is for you – easy, quick, and full of flavor.
Filet of any firm white fish of your choice
1/4 cup sundried tomatoes
1 to 2 tbs capers
1 to 2 tbs pickled jalapeños
1/4 cup Kalamata olives
1/4 cup green Spanish olives
1 to 2 finely minced garlic cloves
1/4 cup olive oil
Season with salt & pepper, then garnish with chopped parsley, chili flakes, and sliced lemons or limes
Place your fish in a pyrex, add all the toppings and garnish, then finish off with olive oil.
Roast at 180C for around 15 to 20 mins until fish is firm and cooked.
Enjoy with a little more squeezed lemon!
